As suggested before, the Brainstorm playlist is a good place to start. However, there are some thing discussed even before that you might require to search for the G3 tags in their TTV podcast.
They have the first two episodes written already, I think they are working the details of the third and fourth episode.
Barraki are sushi types.
Everything that is suggest to happen after 3 years will not be considered cannon.
Good Guy is cannon.
Lava farming is semi-cannon
Lewa is a girl
The island is named Artakha
Ta-Koro is Mangai
Ko-Koro is Ihu
Po-Koro is Motara
Ga-Koro is Naho
Onu-Koro is Tiro
Le-Koro is Kanae
Breeding between different regions is not cannon
Makuta is the main antagonist in the first 3 years. Has the mask of control
Ekimu is the creator of Matoran. Has the mask of creation
Kharzhani is a scheme and a little insane. Has the mask of alternate furtures
These three are brothers.
The Toa are like elemental avatars. Similar to Galactus Heralds, the Elemental Gods give them powers.
Toa lose their matoran identities as they become Toa.
There are six natural Toa and one artificial Toa.
There exist the seventh lightning tribe, which was created artificially.
Voriki is the Seventh Toa.
There exist a natural Toa cap of 7. No more can exist, due to complexity reasons and nothing to do with the actual world.
Rakshi are the main antagonist of the first year.
Rakshi are mutated matoran, who where corrupted by makuta.
Corrupted elemental powers mutate its host. (can’t remember if this is cannon)
All the tribes have all the genders.
Pohatu useed to be a Kohilli player.
Onua was a scholar
Tahu used to be a a warrior but got semi-exiled.
Gali was a guard.
Lewa was a street urchin
Kopaka is a prince
All the Toa used to have no elemental afinity when they were Matoran.
There is no Toa of light.
Boxor are cannon as long as they are not literal and figurative plot armor.
Mangai/Ihu have conflict due to previous wars.
That is all I can remember of the top of my head.

They were going to make a 35 page story bible. Not sure what the status of that is.
