Double post isn’t allowed, and when such double posts happen a mod must always edit it. On sites like EuroBricks, there is an automatic auto-edit when someone double-posts. Could such a feature be added for this site?

…Or just don’t double post. We won’t excuse bad habits you pick up elsewhere.
You can edit your posts to add to them. It isn’t difficult.

Implementing a feature like that would probably be more trouble than its worth. Plus there are caveats to the whole double posting rule; like how you’re allowed to double post if the post is an update to creative content / promotions & advertising.

Most of the time people would just accidentally double post, not because of a bad habit.

Eh, I’m not sure where you’re getting the statistic for that, but I’m having trouble believing that’s the case.
This. There are a lot of other more important fixes that could occur before this one, and given the time some of them took, it sounds like implementing this would take a good while.
