G1: The Toa Metru, a Bohrok (Which Bohrok is up to you), Vorox, Skrall 2009, Toa Mahri, 2003 Matoran, and almost all of the titans.
(For G1, I may think of more later.)
G2: Kopaka, Master of Ice, Onua, Uniter of Earth, Tahu (both versions, but I prefer Uniter), Umarak the Hunter, Ekimu the Maskmaker, the Protectors, the Creatures (sans Ketar, and maybe Melum as well).

Any set with purple in it. I am getting uniter Onua just for his two should spines. If you haven’t got Takua and Pewku I recommend that one. It has a really nice little function and it makes me smile very time I look at it.
Any set from 2001
Honestly, pretty much every G2 set is worth getting. I only have a few, and they tend to be the better ones, and I love all of them.
In other words I recommend.

Protector of Fire.
Skull Slicer.
Skull Warrior.
Mask Maker VS Skull Grinder.
Kopaka and Melum unity set.
Lewa and Uxar.
Umarak the Hunter.

Well, what do you seek? Usually people seek pieces, playability or something that looks cool on a shelf, so I shall answer all three.
Pieces: The Stars have some rare recolours, as do the Bahrag. The Barraki have some useful pieces as well. As far as small sets go, the 03 and 06 Matoran are good options. I’d avoid sets from 08 due to the breakable joints.
Playability: Bohrok or Bohrok-Kal, obviously. The Inika and Piraka are also quite fun. The 03 sets incorporate a function into a small set, so those are good. The Bahrag also have a good function, and so too does Pewku.
Shelf looks: Axonn looks pretty imposing with that axe. Aside from him, most of the Titan set sans maybe the Bahrag. The 08 and 09 sets look particularly good IMO (with the possible exception of Mistike Gali.

Why them over all the other Bohrok?
I guess I just recommend them better than the others. It’s just my opinion.
