I’ve got too many favs. Slave 1, the ARC-170, ETA-2 Interceptor, Droid Tri-Fighter and TIE Bomber are all standouts.

Hands down, the LAAT:
This thing is just so…awesome. I just love way it looks, the sounds its engines make, it’s heavy weaponry… 
Now, if I needed to pick a space-faring ship (which I’m not sure if the LAAT can travel in space)…I’d definitely say the ARC-170.
